Hello! When making honeycomb baking soda is always used. Could we change it with baking powder? I am trying to understand the utility of the ingredients and the ''whys'' behind them. As i know baking soda is used to acidic mixtures and i think that sugar is acidic as well so (if sugar is acidic) that makes sense.Is that right?
Baking soda is sodium bicarbonate only and needs a liquid AND a acid in order to work. Baking powder has sodium bicarbonate plus an acid and only requires liquid to activate it.
In the case of honeycomb (or also peanut brittle) the break down of the soda into carbon dioxide (bubbles) is caused by the heat, not an acid.
You would not want to use baking powder, the addition of cream of tarter (the difference between baking soda and baking powder) would not do any good, and would probably add an unpleasant taste.
Baking powder is used in baking because it contains both the bicarb and an acid for those baked goods which do not have an acid as an ingredient.
