Did the personal chef thing for a while, loved it, but hating all the work of keeping the business running and was ready to get in the commercial side of things! Then was the Event Chef for a super high volume facility with a tiny, tiny kitchen. Teaches you to appreciate some space!! I've been a KM, expo, garde manger, and pastry. Just started as Executive Chef in a low volume facility for a charity organization. It's exciting and frustrating as this kitchen is a total mess and needs everything from inventory to cleaning procedures put in place. It is a big task. I am also mom to 4 little ones!!!
