Hi new here from australia

    Hi everyone who reads this,
    Interesting site have read some of the post and they are good. Glad I was able to find a forum where I can get ideas, ask questions and maybe answer some. I'd like to introduce myself, my name is Jade and I'm an aged care head chef and I love my job.
    Some years ago I gave up my restaurant of 20 yrs and wanted to get out of the food business completely. Nothing interested me so I returned to food.
    I had never been to school or worked else where to be a chef, I just taught myself. Obviously I had to have been ok since I had a good restaurant for so long. So after that a yr later I worked for a recruiting agency in hospitality, yet something different, aged care, I loved it. I felt like I was doing a hobby yet getting paid for it. I worked as a food service assistant FSA and chef at places that they need extra staff, loved the roustabouting. Only at time some places left me angry and disgusted at the food they fed these poor wonderful elderly. I mean I wouldn't feed my dog with that food. That was when I knew what I wanted. I wanted to run a kitchen cooking for the aged, not just feeding them nutritious well balanced meals but restaurant quality meals, food I wouldn't hesitate eating myself. And I found the place, changed the menu, the suppliers, staff and am proud of how my kitchen is run. It's so rewarding, knowing. And seeing the content and happy faces every day on the elderly that I serve. Now finding this forum I am always looking for ideas in menus, and I am sure I will find quite a bit.

    G'day, Jade - welcome to ChefTalk!

    Australia is one of my favourite places, I visit about every 2-3 years, alternating with when my sister comes back to the UK, so we see each other regularly!  She lives in the ACT and has a home at Bateman's Bay, NSW - love that area of your VAST country.

    It certainly sounds like you've found your vocation in life, ensuring that the elderly get food which is both appealling and tasty, too.  Goodonyah!  Nutrition seems to get forgotten sometimes when looking after the sick and/or the elderly - so I am glad that they have such an advocate as you.

    Our membership is broad, from around the globe and all levels of culinary ability, and I'm sure you will find lots of like-minded cooks/chefs here.  Feel free to join in on any thread you find interesting, or start your own in the relevant forum.  There are three professionals-only fora, but we urge professionals not to restrict their posts to those fora as many of us are unable to comment, or ask a question!

    The wikis, blogs, articles, reviews and photographs are all well worth viewing.   I hope to see you around the boards!

    Nice that you visit us down under so often, hope your stays here are enjoyable. I'm in Victoria so that another state from your sister.
    I too hope there are many here on this forum that I can relate to and get ideas as well as share them.

    I have family members who live and work in Melbourne - one of my favourite cities!  Lots and lots of wonderful restaurants - a foodie's paradise.

    Welcome lamchef, sounds you like you have a very well rounded experience. Also sounds like you found your calling with the hospitality recruiting. Like Mark Twain said love you what you do and you will never work another day in your life (paraphrased).
