Can someone tell me what a windsor pan is used for?
This pan is used for reducing or finishing sauces. The high sloped sides and heavy bottom promote even cooking and no spills if the sauce bubbles up too quickly. You can whip in it, or make hollandaise. The top holds a stainless steel bowl as well so you could execute a sabayon, or melt chocolate.
