    Hi there, I have recently made the decision to move back to being a chef after a break of 15 years due to service in the armed forces, and now I am totally lost lol, I still have some of the old skills although there is some fade in them and I'm sure there are things I have forgotten over time, but I'm now wondering where I should start? I spent 2 years at college learning the basics some 18 years ago but now don't really know where to start? Any advice greatly appreciated, and I look forward to getting to know you all on the forums.

    Hello and welcome----If you remember back in your kitchen days---you mostly need to get into the restaurant of your choice---the skills will return--and you will get promoted----

    No chef wants to waste a skilled worker on a simple job---Mike----

    Agree with Mikewoods it takes time but they will return to you. 15 years is a long run not to work in the kitchen and it is a lot to take in the. The heat, the hours, the standing just be upfront with the chef and take your time.

    Get back into that kitchen and have fun! Stay passionate and be willing to learn and relearn. Im glad to hear that after 15 years the life is pulling you back in. Cheers and good luck!

    Hello Mate. Just wanted to say Hi and welcome. I'm an ex-mil too. I've just taken up cooking as a hobby. I signed up to ChefTalk to learn from others with more knowledge and skill than I have. (Not too difficult that) All the best for the future, I hope to see you on Master Chef soon.
