A hello from the Midlands in South Africa! I was really happy to find this site to get help with catering portions for a large wedding we're doing in 2 weeks time. Really appreciate the advice people have given out. We're opening up a bakery on our farm shortly as well as a coffee shop but have been doing weddings for a few years now. We've always hired outside caterers but have had a few disasters so going to keep it in-house. Our main business though is supporting community permaculture gardens and buying and selling fresh veggies. I meant to type this out about an hour ago but got totally distracted looking at the pictures of everyone's desserts. I am not a professional chef and don't have the time to take off to go to school for that but am an experienced cook and love learning new ways of doing things as well as taking classes inbetween life on weekends.
