Hey guys im new to the site but not new to the culinary business.

i have been a line cook for 2 years and a dishwasher for my first 3 so i know my way around a kitchen. ( i am only 19 btw)

cooking is all i know and i just want to know if it is going to be the right choice for me. i have worked at 2 nice restaurants. i just started at one of them and i am going to be in charge of the downstairs line which can do up to 4,000 a night during the summer. it is mostly barfood down there but i am ready for the challenge.

would this kind of experience grant me way to furthering my career?

i am at a standstill with school though. i have completed two years of general courses in college and dont know where i want life to take me. i am starting to think that school would be a waste at this point except to get my foot in the door, which my experience would already allow me.

just a hello and a little feedback would be awesome from the chef's that i am sure prowl this site.

thanks again!!

Welcome to Cheftalk.

Whilst I am not one of the great chefs on this site - there are many of them here.  Why don't you post any questions in the culinary students' forum on the site?  Many of the professionals give lots of good advice on that forum - and you would get a straight answer to any question!

The wikis, blogs, articles, reviews and photographs on the site are well worth spending time to view.  Lots of inspiration and information to be had there.  Join in on any thread you find interesting, or start your own in the relevant forum.

Hope to see you around the boards!
