Heston Blumenthal's Roasted potatoes

    All,

    Yesterday I tried Mr Blumenthal's Roasted potatoes from his book "At home". However, I found the roasted potatoes quite hard and "gummy", like I didn't get that crusty part. I did follow the recipie carefully though. Maybe the sort of potato was wrong?

    Do you have any tips for getting the potatoes as crusty as described in the recepie?
