Hey guys could you help me on choosing a 240mm Carbon Gyuto? I have a 270mm Konosuke HH (stainless), which I Love, but I only use it at school because of its size. Now I am looking for a smaller one to cook at home and a 240mm seems to be a perfect fit. The tricky part is that I have only a $150 budget. I've been checking some options of Blues, whites and 52100, but still undecided. Also, my konosuke is wa, but I have no problem with western handles. Any suggestions? Another info, I am sharpening pretty well know. Thanks!
