Help! Cooking rib eyes on a charbroiler. Need some advice

    My diner will be serving ribeyes. We have a char broiler. What temperature should the char broiler be? How long should a medium steak be cooked, on average? The steaks are about an inch thick. I was told about 130 degrees.... internal temperature. Also, how long should the steak "sit" before serving to the customer? Thanks in advance for your help.

    140-145 is by definition a 'medium' steak. There is no set 'time' it takes to cook a steak, it depends on how thick it is. Ideally you'll rest it as long as it took to cook before flashing and serving, usually 5-8 minute for a med. steak. Hope this helps
