Help / Advise on starting a creperie??

    Hello out there!

    I wan to start a small crepe business. I don't want a sit down type place. I would like to cater to walking traffic.

    I have owned and operated an ice cream cafe so I know hard work.

    Would love suggestions as to equipment, recipe. etc...

    My city- Benicia, CA will not allow food trucks or carts...only at produce market.

    That's too bad about the food cart/truck policy there. Could you skirt the issue by having a cart in a nearby town, one that allows them?

    I'm going to a planning board meeting in my little town of Benicia ( 28,000 population) raise this issue about food trucks. There is a Taco truck in town and it has been here for years? I got a little fight in me so we will see what happens. 

    What is very important here is I need to earn income!  I won't make if I have to pay $3K / month for a stationary building.

    Interesting--I checked out that taco truck on Google and its mere existence does seem to contradict the policy you cite. Maybe there's a grandfather clause?
