    Good times one and all! Just call me "TheBeef". I figured now that things have slowed down for me I should start being a part of a community of people who have a similar passion for cooking as I do.

    A little about myself: I have been a head chef for years at various fine dinning places throughout Beverly Hills and the coastal Los Angeles area (Manhattan Beach, Hermosa Beach, etc.) Now that I am slowly unwinding from full time work (gettin' old) I cook for the rich denizens up in the rich areas around where I live (Palos Verdes and Beverly HIlls). I also train people at the places I used to be head chef at as my focus was mostly on meats and cooking the finer cuts. b^^

    Anyway, if you can handle my unorthodox mannerisms and have any questions about various ingredients, recipes I'll gladly share them. :) But being part of a cooking community sounded like fun and I hope I get to share and continue to learn through other various chefs (Pro and home). b^^

    Thanks for the intro, TheBeef. Your experience and willingness to share with pros and home cooks alike is most welcome. As for unorthodox mannerisms, you'll fit right in, believe me. So long as people keep things civil, we're fine with quirky. /img/vbsmilies/smilies/crazy.gif  If not, I'd be in trouble, and I've been here almost 15 years.

    I'm sure you'll get a kick out of the cooking challenges in the Food and Cooking general forum. Each month a different ingredient or cooking method (usually) is chosen and everyone who wants to weighs in with their take on it, for instance rice or stews. This month was different (food in movies and TV). The new challenge will come out next week, and I hope you'll jump in.

    Be sure to have a look at the cooking articles, cookbook reviews, etc. You may be interested in submitting some of those yourself for consideration, as much of that material originates from members.
