I just found this site yesterday - looks to be very helpful and informative. I do have a pressing question - we just installed a Royal Range yesterday in our small commercial kitchen in what once was a house. (We have a gourmet take out joint) Bought it new and didn't get any type of manual and I do not have commercial kitchen equipment experience. Can I manually turn on stovetop burners as I need them? It became so hot in the kitchen by the end of the day and I was a nervous wreck to leave all those flames on all night that we switched off the main gas valve before we left. And what about the oven pilot? It's a 36" 6 burner cooktop and gas oven. Thank you in advance!!
