Greetings from the Midwest. STL area actually, born & raised. Some of my early food service jobs landed me a cooking position in a Polynesian restaurant as a teen. I later did a stint as a cook in the Navy, but never professionally since, besides some catering jobs I've done for close friends & family, including my own wedding reception. I enjoy cooking on my own terms, if you will. I feel I get the best results when I want to do something, as opposed to have to. I was the tailgatechef for the first 10 years the Rams came to town for 25 - 35 hungry carnivores every game day - so goes my username. Tailgating in STL sucks these days - just like the team. I love to fish, hunt, camp, float rivers, plan trips & cook. I love cooking outdoors in remote locations. I love being at the helm when it comes to food and I'm always looking for new ways to improve my game. I like the whole concept of ChefTalk and I hope to gain some new ideas & knowledge ...and maybe contribute a little.
