Hi, my name is Ben. I have been cooking professionally for over 15 years. I have my red seal which in Canada makes me a certified cook, and I did not attend culinary school. I love talking about food and anything related to food. I also write a blog which is intended to help home cooks by giving them tips and pointers from professionals. I am excited to be part of this forum and look forward to many great discussions about food and cooking.

When you took your Red Seal you didn't attend school? You grandfathered it?

I challenged the exam. I had to prove that I had enough hours (double what it normally is) working in the kinds of restaurants where I would learn everything I needed to know. Then I paid the fee and wrote the exam. That was it.
