Hello Chef Batali

    Back in the mid 1990s when I was a stay at home mom I enjoyed your shows on the Food Network and I learned alot from watching you.  I learned alot when you did the eipisode where you made Daube Provencal Beef Stew and I use the techinque you demonstrated to this day when I make oven baked stew.

    Thank you so much for being a role model and an inspiraton to so many.

    My question for you is as a Chef what traits do you look for in people  when you are hiring for the kitchen staff/brigade?
