Hello and a bit of background

Hello, I'm Dave, I've worked the kitchen of a private southern college for 13 years and am currently a station chef. I'm a life-long knife freak. I collect Sabatier's and use several different Global's and MAC's, as well as a few Mercer paring and peeling knives on a daily basis. And I look forward to learning from the other members here.
