hazelnut cream

    Hello everyone,

    I have been going to a cafe that serves pastries with "hazelnut cream". The cream has a really distinctive flavor but I wasn't able to get it. I tried pastry cream with praline, with whipping cream but the flavor is not even close. I tried hazelnut butter cream, also not even close.

    I talked to staff and one of them tried to talk to the chef into giving me the secret and all he was willing to say is: I don't use any artificial flavorings or extracts, I use fresh hazelnut. 

    Can someone please how to make a hazelnut cream using fresh hazelnut?

    Hazelnut flavoring such as was so popular in the 70s in the states in coffee, is first of all disgusting, and second of all, not anything like what hazelnuts taste like.  The taste  of actual hazelnuts is so mild that i can't see what the two have in common at all.  I imagine that was hazelnut |"extract" they were putting in the coffee, though possibly it was hazelnut "flavoring"

    To get something nutty to flavor what you're making usually you grind the nuts, put them in warm milk and let them steep.  Then you either strain or use it as is.   You might need to process the hazelnuts to make them like a paste and then press through a very fine seive.  But i would imagine that steeping them in hot milk would be a necessary step. 

    But since you didn't mention what methods you did try, it's hard to suggest a way you might do it differently. 

    Also was the one you liked like a custard cream or pudding cream?  or a buttery fluffy cream?  or a paste kind of consistency?  Then you'd have to use a process like making peanut and nut butters.  But the consistency you're looking for ,will determine what procedure you need to use. 

    And did it have any chocolate in it?

    Thanks for getting back to me. I did try pastry cream with praline, but the taste did not match. I will try to do what you suggested and see what comes out of it.
