Happy New Year! How did your NYE go?

    I survived it!/img/vbsmilies/smilies/lol.gif   NYE actually went pretty damn smoothly, right up til the last table- that one was a bit rough.  Obviously you know New Year's Eve will be busy, that's a given.  But I wasn't prepared for how many steaks I would sell.  I cut meat today and figured I had enough to get me to at least Saturday.  But the last table of the night was 15 steaks; tops, NY strips, filets and ribeyes.  Unfortunately I had to clean and cut three of the four!/img/vbsmilies/smilies/eek.gif   That part sucked!  Put us a little behind. 

    But overall I can't complain!  Sales were fantastic and everything except the last table went extremely well.  I planned to count everything after closing but when I hit the 13 hour mark I realized I'd probably be going in early to do it tomorrow instead./img/vbsmilies/smilies/lol.gif

    To those of you still bangin' it out in restaurant kitchens, how did your NYE go?

    Ahhh the days of restaurants ended for me a few years ago. December was a busy month with a lot of catering up to the weekend before Christmas. Turned down everything from the 22nd on thru the 11th. Nye was great, just family this year, grilled burgers an built a fire in the pit to roast marshmallows and watch the fireworks.

    Hopefully everyone had and continues to have a great holiday season.

    Ha ha I hear ya. Two years ago I put tournedos Rossini on the NYE menu, and out of 140 NYE table d'hôte tickets sold, I sold 122 tournedos. I was not prepared for that. I thought I'd do 65% beef...i was cutting tenders at the last second. I remember going through all I had in house, 86ing it... And having the server of the last table come up to me in expo to say "I dropped the last table there... What do we do?"

    Ha ha..

    This year I was on a mountain at a party with thousands of other people... Watching an epic DJ battle, fireworks, cold as hell. Not a drop of alcohol or any other drug, stone cold Sober... This time I was with my family for the first time in 18 years.

    So, it went well.

    My best/worst was NYE dinner prix fixe six courses for 150, then apps for the NYE party, then post party breakfast buffet, then turning the kitchen around in 2 hours for 10am brunch for 1,000.

    Thank god for good sous chefs.

    Wow!  Am I the only geezer still bangin' it out every night?  I'm glad you guys had a good one, but am I the only CTer that worked NYE?/img/vbsmilies/smilies/eek.gif/img/vbsmilies/smilies/redface.gif

    I got crushed the New Year's Eve and Day. Over 500 covers each shift through a 3 hour service. Thought I was a day ahead on prep. I was wrong... Tomorrow I get to go in and literally prep EVERYTHING on my station, then have my a-- handed to me again during service. The joys of season...

    Hahaha!  Yeah, that's true.  Oddly as crushed as we got on NYT the next day ended up being completely dead.  Probably be more of a normal Saturday again tonight.

    Mine went fine, but was a little rough- thursday night's my B team. They did great, but I have to do a lot more of the thinking with them. We were busy all night, but the real numbers at my place always go to the day crew; they did 565 breakfasts on friday, whivh I think is close to the record.
