Hands down most even heating commercial bakery oven? Money no object.

    Can't boil water
    Let's say that you wanted to maximize throughput and consistency of results for baked goods, like scones. You have been given an unlimited budget to play with. What would you do? 

    The issue with approaching companies directly is that they're all going to tell you that they achieve consistent results. But of course we know every design has idiosyncrasies.

    Which design?

    Which company?

    Currently leaning towards Rational rotating rack.
