Anyone have a spice mix recipe for gyros? Here is what I use now, but it does not really hit home like I would like it to...

9 parts salt, 3 parts sweet paprika, 1 part hot paprika, 1 part white pepper, 1 part black pepper, 3 parts dried parsley, 2 parts garlic powder, and 3 parts of dried oregano

This isn't something I really make but if you are using normal dried oregano I would try and look into finding some more pungent oregano made from var. onites. It may be labelled rigani. Most dried oregano sold is var. hirtum, which has a rather different taste.

Things I would consider adding to jazz it up: maybe a little fennel seed and thyme. Most commercial blends contain some dried onion.

Interesting point on the oregano, I did not know this. I did know there was Mexican and Mediterranean, but I had no idea what made them different. I am not sure which variety this is but it is much stronger than other types I have used and has notes of lemon when I smell it.

Keep the feedback coming. BTW, I use only ground lamb, but I am thinking of adding some ground pork to see how it works.

Alton Brown's version includes garlic, marjoram and rosemary, salt and pepper. He uses ground lamb only. I tried making my own version and used half beef, half lamb and a Penzeys spice mix, Italian Herb Mix, which has just about every herb mentioned in this thread (although I don't know what type of oregano /img/vbsmilies/smilies/smile.gif). I'd stick with using just lamb if I make them again.

Ugh... we have a special that my chef came up with that is a crispy Greek sandwich with a spicy Greek dressing. The ingredients for the dressing are.
2 parts ranch, 1 part each of sour cream and plain yogurt then cumin, sriracha, Mediterranean oregano, and Cheyenne... tasted ok... but not Greek. Wonder if we got any complaints hahaha. Not going to take much advice for granted from him on Greek food.
