Gungasim's pineapple ham Extravaganza..with Haluski on the side

    this is a long thread so if you press play you can have background music as you read





    That just got parked in a 250 oven for the next 3-4 hours until it reaches 130 in the middle, then it gets a mustard, horseradish, pineapple juice glaze.....



    The root, washed and cut up a bit. That small piece in the upper left will be planted in the garden in my horseradish patch, as it had shoots, and will grow.




    After the root has been peeled



    Run thru the grater on the processor.



    And then the teary eyed part, opening up the processor and getting it into a jar. That was allowed to sit for about 10 minutes before adding some white vinegar and salt. The time at which you add the vinegar is important. Vinegar stops the enzymatic action in the ground product and stabilizes the degree of hotness.


    Back to the kitchen, gotta do the mustard/horseradish/pineapple juice glaze for when the ham gets to 130, and then also have to cut up some stuff for the Haluski that will go with the ham...

    Few tablespoons horseradish, few tablespoons mustard, and about 1/2 the juice from the can of pineapple, mixed together




    Ingredients for the Haluski....





    Set that aside until later.....ham has hit about 130, so out it comes.....spread on some glaze, cover with pineapple slices, and then cover with the rest of the glaze.....



    Back into a 350 oven for about an hour or until inside reaches 140.


    In the meantime, render the bacon for the Haluski


    The add the onions and sweat them for a few minutes.


    Then the cabbage.....


    Cook that down, season with black pepper.


    Boil up the noodles in a separate pot. By then the ham is done.....


    Stir in the boil noodles to the bacon, onions, and cabbage. Add about 3 tablespoons of butter........


    Carve the ham, and enjoy with the fresh horseradish and hot mustard...

    You forgot to add the "Hmmmm... delicious" at the end of your thread. You know like when the TV Chef tastes his dish at the end of a food show! /img/vbsmilies/smilies/biggrin.gif  Soooo.... how did it taste???

    It certainly looks wonderful. I love that you took the time to post one photograph for each step and detailing the process. Thank you for that.

    Nice job, Haluski is a great Polish/Czech dish that not many people make, or even know about. We use to eat bowls of this for dinner,with some good Kielbasa...........Do you make your own Polish sausage ???????? now Stuffed Kapusta,,,,,,,,,,,,,,,,,,,,,,,,,,,Take care ........................ChefbillyB..................P.S. sometime try taking the sauteed bacon,onions, and cabbage and throw it into a thickened chicken stock, makes a good soup throw in some ham also...........

    I don't think it's possible to ruin a ham. They're always good. That said, cloves and pineapple Is as close as you can get to ruining one. I don't get how it became a classic.
