Greetings from Michigan/Indiana

    Greetings everyone,

    I'm truthfully curious to see when I actually joined this site. I to register and found that someone took my desired sign in name. Turned out to be me. Or I'm posting under some other member's name who happened to have my password. 

    Anyways, I've always enjoyed cooking, but really loved baking. My girlfriend at the time (now my financé) and I both loved desserts and I loved to make them. After months of her feeling awful after eating most everything, we found out she had Celiac's and everything with gluten went out the window. I never realized how much had wheat in it... We avoided desserts for a long time and I've taken more to my cooking side. Her misfortune ignited an excitement in cooking, in creativity. I love the challenge of figuring out how to make things that typically have wheat suitable for a gluten free diet. I now find far more pleasure in a well cooked and presented meal over a nice piece of pie. (I won't turn down a nice piece of pie, though)

    Well that was a long, drawn out way for me to just say "Hello!"

    Welcome back, JAVink! Yeah, it must be a record. We're very glad to see you back.

    We have some chefs and home cooks here who also want to cook gluten-free for various reasons: their customers want it, or they do themselves. I'm hoping we'll soon have a forum here dedicated to helping those with dietary needs connect with each other and with people who have solutions for them. Keep your eyes peeled! I hope it won't be too long.

    In the mean time, use the search tool to help you find useful discussions. While we ask that you not post in the professionals' forums, you're encouraged to search there and read to your heart's content.

    I'm in the same boat as you. Literally. Girlfriend (now fiance) getting sick after eating. Found out she can't have gluten (although her condition is similar to Celiac's, it's a different condition), and now we're trying to figure out how to make everyday foods without the gluten. This is a large challenge for us, because we make so many things that are roux based; gumbo, sauces, stews, etc. I would love to see a "dietary needs" forum here.
