Gravy Recipe

I need a recipe for a "meatless" gravy. Preferably a white gravy. Anything that is basic and quick, but that could take the place of a chicken or pork gravy. Any suggestions?

Try a mushroom veloute. Basically a flour, cream and butter sauce with the "liqour" from cooked mushrooms added. Very rich and very good.

Make a Roux of 1 tablespoon butter and one tablespoon flour. The flour and butter should be added simultaneously, and not allowed to brown. Add a little broth and allow to boil a few minutes until thick. Season as you wish, but lightly.
