grandma's waffles

    I remember my grandmother's waffles as having a wonderful crunchy outside and almost creamy inside. Today's waffles don't compare....they don't have the same texture contrast.

    I wonder if her recipe made the difference, or  my memory is inaccurate, or it's because she used an old cast iron waffle iron, without any Teflon. I believe hers did plug in, but it was probably one from the 1940s.

    It's recipe and technique mostly.  The iron helps, but I get a nice crispy outside using my cheapo waffle maker.  My non-secret is beating the eggwhites.
