gluten free baking

    MY girlfriend is a celiac and i have found it exceedingly difficult to produce gluten free baked goods from scratch, which leaves us paying high prices for box mixes which aren't much good either.

    des anyone have any experience with gluten free baking? i'm most interested in creating a good bread product.

    Get a grain mill and the book, Gluten Free Baking by Rebecca Reilly. It has formulas for gluten free flours and how to use them. With someexperimentation you can come up with your own formulas

    She buys whole grains at health food stores and co-ops.
    My advice would be to not buy a cheapo $25 dollar mill because if you're really gonna use it it son't last.

    A good friend of mine has celiac, making dinner for her can be somewhat challenging, specially when it comes to pastry. Thankfully yopu can make fabulous cakes using ground nuts.

    I know this is an old post and maybe you're not around, but if you go to
    www.celiac.com, there is a wealth of recipes. I made the white bread for a friend who had not had real bread in years (just the rock-hard stuff they sell frozen). She devoured it in a minute.
