Lord,I love those anal retentive folks at Cooks Illustrated. Just when you thought there was an ingredient you needn't much worry about, *wham* there you go!

In seriousness, I'm not disputing anything they're saying about butter and its freshness. All I'm saying is there are moments where I pine for the time when I was ignorant about such things... aw heck, shake it off. Knowledge is power!
