My brother called me today and said he had a good weekend fishing. He brought home 3 lovely steelhead. One was about 3 foot, the next about 2 foot, and the smallest about 18 inches. Of course I got to side and skin them. I let my broher pinbone them. But after it was all done, I ate some of the freshest fish I have had in a long time. Just floured with a touch of salt and pepper and panseared. Now I have the carcasses simmering into a light stock, and about 3 pounds of fresh steelhead in my fridge. Fish for dinner the rest of the week.
