Freezing pre-made cakes

    I was wondering if I can make cakes in advance and freeze them or at least refrigerate them  a couple of days befored decorating?

    I have 3 Anniversary Cakes to make, all for the same day. It would really help out alot if I could make them a couple of days in advance and just take them ot and decorate them.

    yes you can just freeze blank cakes and then decorate and allow to defrost.  Many bakers do this.

    Do I decorate frozen or do I wait until after it thaws?

    You need to take the cake out of the freezer, put it in the fridge to let the temperature gradually come back up and then take it out and decorate it. You can't go straight from frozen to not frozen or you will have a BIG mess, especially with colors.
