freezing fresh mozzerella?

    freeze in brine, out, doesn't matter? any other ideas to use if not headed to the freezer? have to 'use it or lose it' in the next day or two...know it won't be good for fresh salads after freezing, but i can still use it for baking, non? shred before freezing perhaps?...was thinking i could cube it, egg wash and bread it and either roast or fry it..sorta like croutons...now, if i had a smoker, that might work as well, but i don't...i have about 3, 1# 'logs'...any ideas would be great..thanks in advance
