Freeze Dough? Help please.

    Can I freeze stollen dough after first rising?  Recipe makes three stollen, this year I only need two.  Thanks for any help.

    Most doughs are just fine after having been frozen but the yeast doesn't live forever, so use it within a few months. I don't see what would make stolen any less freezable than any other yeast dough. Let it thaw in the refrigerator. It will rise a little and very slowly but you can deflate it, knead it again, and let it proof at room temperature.
