Food in Disguise

    With healthy cooking in mind today we find chicken and turkey passing themselves off as other foods. So far to me chicken isn't good for anything but being chicken. Turkey on the other hand has worked in, bacon, pepperoni, many sausage varieties as well chop meat. Why has turkey worked while chicken has failed ;)

    It doesn't work for me, I don't like turkey in any of its disguises.

    I've mentioned before that turkey bacon tastes like turkey pastrami that tastes like turkey ham that tastes nothing at all like properly roasted turkey, or ham, or bacon or pastrami.  Some progress has been made in turkey and chicken based fresh sausages, though. But when it comes to mechanically separated chicken, that's different.

    That's easy.  More meat per bird compared to chicken.  This means less labour, and less waste (bones, skin).

    I really like the turkey want to bes, haven't found one yet I haven't. Bought real smokd house pork bacon sampler from igourmet.com and burgers smokehouse. It was to greasy and fat, just didn't find pork better than turkey bacon anymore. As for the rest turkey replacements have all worked out, maybe it's the fat savings turning me this way but turkey sausages, kielbasa and cold cuts work while chicken franks and other of its imposters are gross.

    The Sprouts markets here in SLC make pretty tasty chicken sausages, and I occasionally get Jennie-O Italian turkey sausages. But when it comes to bacon, especially home-cured, it has to be pork for me.

    Well of course they are!  Most of that-tum, uh..."stuff" is made from "mechanically deboned chicken". Now I won't spoil the surprise and tell you what or how that is made, I'll let you do the research on that.

    That's what is nice about the Sprouts chicken based sausages - you can see they are made of real ground chicken, you can see the bits of herbs in them. And they taste good! No mechanically separated chicken involved.

    Friend swears by chicken breast hot dogs made from a local small Italian chain in SoFla called Doris Market, (no affiliation), also Trader Joes "all natural uncured chicken hot dogs". (Have to make some of my chicken breast bacon and post some pics). As far as the C vs T imposter, besides hot dogs everything else commercially processed pales in comparison not to mention the whole "pink slime" commercial additive that's in a lot if not most commercial sausages and chain burgers including "Imposter food" (goog or bing Jamie Oliver + pink slime)
