Before my question, a little parental bragging must be done to set the stage. My older son Justin, will be coming to visit in September. haven't seen him since last summer, when I went to Charleston to visit him. He's become quite the home cook, and uses his talents to lure in the ladies quite often!! And when there's a 'Q', he's called on for either his own spice-rubbed pork, or a jerk chicken with Caribbean rum sauce! Whenever he comes up, we do a 'request' dinner for him, either a dish he remembers from boyhood, or something he's seen that he wants to try. Well. This year, the ingredient is foie gras - he's read about it, seen it on TV (a la Emeril!), and wants to try it! I'd love to do something just real simple, so he can get a good sense of the foie itself; something like a simple saute of it with a sauce of ? port/cherries, or apples? Any suggestions? CC, I'm counting on you!
