    Had some Alaska wild Cod bought from costco other night, good meaty fish. Baked it covered in ground lemon & black pepper. Problem with fish is unless its breaded can be pretty bland. How do you dress up fish to give it flavor

    I like fish that's not bland and cod is about as bland as you're gonna get.  For white fish like this I usually broil in the oven with salt/pepper/olive oil and then top with a compound butter in the last 2 minutes of cooking.


    Salmon I prefer raw so I'll make it into poke.

    Costco sells a stuff salmon which is good fried or baked. We don't have Italian dressing we are a Russian, thousand island house but do have a raspberry vinaigrette dressing. We have had catfish, tuna, salmon and that fish covered with crushed almond, tlopali from costco. Not a big fish eating house, mostly tuna from can for lunch.

    For white fish

    Season, spread some mayo on top evenly, sprinkle with paprika. Broil for about 7 minutes/inch of thickness. Simple, different, and quite good. 

    I like grilled fish tacos a lot too. Season with Goya Adobo with Bitter Orange, pepper, a little ground cumin and coriander. Grill, finish with a squeeze of lime and some cilantro. Load into heated corn tortillas with shredded cabbage and salsa.

    Here's a recent discussion to give you some ideas (Veracruz-style, tacos)

    You could cook it in parchment or foil with asparagus, citrus juice and zest of choice herbs and a dash of white wine.  Grilled is always good.  Top it with pico - fresh fruit (strawberries, mango, etc.) lime juice, cilantro & hot stuff of choice.

    Sauce it up with a mushroom Marsala sauce.

    Skewer/kabob style w veggies and fresh lemon or lime juice herb marinade.

    Chowder/stew with coconut milk and bok choy - give it an asian spin

    Fish cakes/croquettes

    I actually like cod and other white fish because you can make them taste the way you like.
