first head chef job tips and advice please

    So I work at a Thai restaurant been here for almost a year, I'm American and. Love Thai cuisine and am excited to learn. The owners trust me and want me to take the role of a head chef. ( run the line ,order inventory , etc. Her parents currently do these jobs but are getting older and close to retirement. I respect and look up to her mom and dad who have ran and owned multiple restaurants. One big problem is there a cook that's been there a long time and can be hard to work with. Any tips on dealing with. This problem and any other tips and advice on taking on this role since this will be my first head chef. Job

    First question that comes to mind is does the cook speak a language that you don't?
    Like Thai maybe, or some other? Learning some of a "kitchen version" of his (or her) language
    might be a good start at establishing a positive rapport with him.
    Do whatever works--if he's not going anywhere, and he knows you're
    moving up then it behooves you both to start building some common ground now,
    rather than later.

    He is Mexican but speaks English. And we get along fine know that I'm up to speed and. As fast as he is getting orders. Done but I'm almost half his age I'm 25 and I know I can learn from him but I want to earn his respect and have him work with me not against me

    I dont see a problem here <_<

    You guys speak the same language and work fine together. 

    You will earn his respect when you do your job correctly. If he isnt leaving anytime soon , then you guys will just have to work together.

    My advice be friendly not friends... respect each other and work as a team
