    I've been chosen to create something for a festival contest. The winners dish will be featured in one of the small festival booths. There are approx. 60 booths with a variety of classic to crazy foods. They want something creative, easy, fast. I was thinking something along the lines of a deep fried monte cristo but maybe play around with it. Or maybe since it will be blistering hot something like a cold, fresh fruit 2 color gazpacho with some kind of flavoured cream. I need some ideas since everything seems to have been done before at this festival.

    Rice Stick Noodles tossed with Hibiscus Rose Vinaigrette, topped with Bay Shrimp, Cucumber, Watermelon,  drizzled with an Asian Fermented Black Bean Vinaigrette and sprinkled with fresh Mint, Cilantro, and pickled Ginger

    Shrimp brushed with a Honey Lime Glaze, then grilled and served in a Togarishi Spiced Won Ton Cone with a Curried Mango Sorbet

    Smoked Salmon Cheesecake with a toasted Pine Nut Crust

    Chilled Tomatillo Tequila Soup
