Fellen pollen

I was given a bottle of fennel pollen as a gift and looking for suggestions what to do with it. I was thinking about a garlic and fennel pollen rubbed rack of lamb. Maybe a red wine reduction on the side. Anyone have any favorite uses for fennel pollen?

Is it dried? If it's dried then I can imagine using it in rubs especially for pork and chicken. If it's fresh it's best added to a dish at the end of cooking, or in marinades.

It's dried. I was thinking that rubs would be the way to go. Need to dig out my Flavor Bible to see what suggestions it may have.

Haven't actually tried FP yet but understand it still tastes some of fennel, and basil is a very good combo with that and lamb, surprised you don't see it mentioned hardly at all. Bay leaf of course, though maybe save that to stuff inside a boneless leg.
