Eggnog: To cook or not to cook?

    Most recipes I find call for raw eggs.  Some call for cooked eggs.  I've never had egg nog, I'm making some tonight and will be following Alton Brown's uncooked egg recipe.  What's your take?

    I've never even heard of using cooked eggs before you mentioned it.

    What would be the purpose? And how would the custard form?

    I make my eggnog like an anglaise where I cook the eggs with the dairy gently to 180 F to thicken the eggnog and make it last a little longer.  Yum!

    You are right its very good. In fact served the next day , gives  it a real nice silky texture.
