Egg Nog: Separating the Whites before hand?

There is an Island concoction called Sylabub that is similar to our egg nog only  Dark Rum is used and its a tad sweeter then ours.  They beat egg white and float mounds of it in the stuff. Its good, but to seperate it and beat it and put back and then blend   is kind of crazy. Some people make egg nog with yolks some use whole  eggs, some Ice Cream and some Heavy cream or condensed milk or combinations of all. There are different ways. and as long as it taste good all are acceptable.
