I believe you want to use something called "mirror glaze" which is, in my understanding, mix of sugar, condensed milk and gelatin. Probably some white chocolate and food coloring as well.
I'm sure google will provide you with videos and recipes that show how you could re-create this donut, or come close anyways.
My completely uneducated guess based on the book match of some of the color sections.
Layers of different colored fondant stacked into a right triangle cross section with some light smooshing and blending. Then cut in thin layers, folded out in book match to make a larger triangle and laid in place and blended together.
It’s a technique adapted from decorative paper-making.
