    Abe,

Fish sauce is fermented that is why it does not need to be refrigerated.

If you do refrigerate it, crystals will form and then its a binner. Keep it *out of the fridge - it lasts for ages.

    Hi..!!

No, fish sauce does not need to be refridgerated. The salt pretty much prevents it from going bad. As long as you keep it tightly closed, you shouldn't get any odor.

No  nor does oyster or hoisen  not if your talking bottled fish sauce. But a prepared sauce that YOU MAKE  for fish does example tartar, cocktail, dill, nantua etc. What does it say on the bottle? If it says refrige after opening, then do what it says.
