Direction of a new career

    I will be launching a new career within the next month. I'm at the age where I do not have the luxury of spending 20-30 years molding my career. I will be 60 in December, and while that is not that old, but, in reality i have what I feel is a good 20 years to do whatever is needed. beyond that, there will not be that many places willing to hire an 80 yr. old.

    My question, then, is this. I love cooking, whether it is savory or baking. Would I be better off to concentrate my efforts in the Baking/Pastry field, or do you feel that this field is getting saturated due to the popularity of some of the shows on TV that concentrate on this field?
