Designing a kitchen

    Hey all,

    Working on a design for a kitchen, no more than 20sqm, island style, any suggestions on good equipment, (benches, stoves, walk ins etc)? Got a budget of $70,000,

    Design will depend largely on the menu. Used equipment in good shape is better than spending money on new. Look through a few of the other posts on this site to see other suggestions. Given the size of the kitchen, equipment will naturally greatly influence which style or brand you buy. When buying used, make sure to check with appropriate governing agencies to make sure the equipment you  buy will meet code for your area. As an example, in NY only sinks with rounded corners are allowed. The old ones with standard 90 degree corners are not. 

    I'm not sure what Island style is.

    Couple of caveats with used equipment. Never, ever buy used refrigeration--you can buy used walk in wall panels and doors, but not electrical equipment.

    Most of the money will be spent on infrastructure:  Electrical, plumbing, more plumbing, and then the ventilation system, fire supression system, floors, and code items like staff washrooms.

    As for stuff like pans, implements and the electrics you must have worked with brands you like and trust.

    Buy those and you should be golden.

    Agreed. I'd say the same applies for your dishwasher. Spend some time and money on that area. It's heavily used. More than you'd think.

    Edit: BTW, I'm a fan of Southbend ATM for ovens and ranges, Jackson for warewashing, True for refrigeration. I know it can be a daunting task to compare units. A lot of times it comes down to what's easily serviceable. My So.Bends haven't needed service or if they do it's just a thermal coupler. The Jcksns are serviced by my soap guys so they have parts 24/7. And Tru is a decent brand that my refrigeration guy has parts for. They aren't the cheapest units up front, but in the long run ... Well, you're going to pay for it in the long run. Look into it.

    MMMMMmmmmm... I really don't know. I think that they are State side. Sorry for not realizing your locale. I'm sure that they will ship, but you would probably be better off finding out who your electrical/plumbing/refrigeration guys will be and asking their opinion. They're going to give you biased opinions, so take it with a grain of salt, but their opinions are probably based on ease of accessibility and ease of part procuring. That's what my experience is. Hard to find someone to trust.

    Wish I could help more. Warewashing and detergents are a ... HUGE ...can of worms... in the States. It's almost funny.

    Not at all! I've found most equipment I've looked at from the States can ship, but like you've said, finding someone to service it is another thing.

    We've never had to service any of our equipment yet, luckily, however the plumbers/electricians most likely will be able to find something. They're pretty decent.
