Deep frying a Turkey question

    We have an employee party every year and I was thinking of deep frying a Turkey.  My fryers are the normal 40-50# commercial but I am concerned they are not deep enough to cover the turkey.  Has anyone done one of these in your kitchen?

    Fryers are to small, and not deep enough. The whole bird must be submerged in order to cook correctly. Be honest with you  we have used 55 gallon drums cut down and done 2 at a time., far away from any building or wooded area. Came out good. Turkey must be thoroughly, thoroughly DRY otherwise big problems.
