Cutting Board Question

Hi,
Why does one side of my Boos Board butcher block say non cutting surface? What would make a board non-reversible? What are the consequences of using it that way?

I don't know Boos's reason for saying that, but I try to use only one side of my wood board because when you're cooking, there can be bits of food, etc. on the counter top, that get into the wood grain, cracks, etc. If you flip it over without sanitizing it, you could have a bad outcome. :eek:
