Hi there, new to forum and seems like a great place! I'm currently studying my svq 2 professional cookery, and got myself in as a commis at one of my favourite restaurants, 'upmarket bistro specialising in fish and seafood' but wanting to move into fine dining eventually is that something I should try and get into ASAP or stay here for a few years and get myself a good base while studying.
    Thanks for any replies.

    Hello Global,

IMO you should go to the fine dining ASAP.  Why  - why wait?  Most fine dining restos are learning and proving grounds, not really career choices because unless you are the owner there is no money in it.  As far as I see it, there would be no fine dining if the whole brigade was earning minimum wage and overtime because it would be way too expensive to operate.  Fine dining for a cook is basically a learning experience, and since you are learning now at school, might as well do it at work too and get it over with sooner than latter.  I mean why do 4 years of school and then 4 more years of fine dining schooling when you could get it all done in just 4 instead of 8.
