Culinary School versus Home School



Good day Mr. Batali.

I *really* want to go to culinary school but that is just not possible right now. 

I do very well in structured environments.  I like the idea of attending culinary school because I like the idea of having specific lesson plans, being taught techniques, understanding theory and food science, and book learning combined with real experience.

Since culinary school isn't currently an option, is there a curriculum (dvds, books, etc) I can study that will give me as close as possible, real world culinary school instruction?
