Croissants

    Looking for a tried and true croissant recipe that has been thoroughly tested, preferably in a bulk setting. Any and all help is appreciated. Thanks

    When it comes to croissants, recipe is a nonissue.

    As long as you have the techniques down, you can make great croissants out of any recipe.

    I agree with Pat, but if you want great pastry recipes buy a copy of Michel Suas’ Cookbook. Find at SFBI.com. It was the most productive $85 I ever spent.

    I totally agree! Technique is everything. I will just keep at it and perfect mine. I preciate the help.
