Counting free product in Inventory

    Hey fellow chefs, I am new to this so bare with me. I have been in the industry for many years but have run into problem I have not encountered before. When I get free samples of food from reps I do not include it in my inventory. It is a bonus and I treat it as such. This year my food rep over charged me for 50 cs of fries. I have taken the hit on my food cost already. This past month he sent me 30 cs for free. Mid month I had no way to account for the free product. I ended my month with 12 cs, question is should I credit my month end with the 30 cs. In essence showing -18cs. If that makes sense?
    Thoughts and opinions would be greatly appreciated.

    If you've already taken the hit on the 50cs and have a running food cost number than I would personally not add numbers from the new "free" product to your food cost and just accept the end profit it gives you just like you would if you ran a special with samples. Tell your owner/manager so they understand that these are fluffed numbers that will fall slightly when you end up having to buy new cases of fries.

    I get what you are saying, thanks. I still made food cost when I was being over charged as it was during peak season and I chose to take my free case's now in the shoulder season. And thank you, I will make sure the owners understand that the lower cost for the next 2 months is due to this windfall. My food cost is very consistent so it should make sense. Thanks, I was leaning in that direction.
