Hey fellow chefs, I am new to this so bare with me. I have been in the industry for many years but have run into problem I have not encountered before. When I get free samples of food from reps I do not include it in my inventory. It is a bonus and I treat it as such. This year my food rep over charged me for 50 cs of fries. I have taken the hit on my food cost already. This past month he sent me 30 cs for free. Mid month I had no way to account for the free product. I ended my month with 12 cs, question is should I credit my month end with the 30 cs. In essence showing -18cs. If that makes sense? Thoughts and opinions would be greatly appreciated.
