Dear Friends, I am starting a small cafe with the help of some friends (60 chairs) and need direction on what kind of oven to purchase. It will need to be a counter top unit. We are planning light lunches and dinners, plan to bake quiches, some breads and meats, and warm items for serving, etc. We would like to spend between $1000 - 2000. It would be great if it heated to at least 550 degrees and can be either 120 or 240V. I am reading that a 3 element unit is the best, but then have been told it is not necessary. I understand that the feature of the fan turning off when opened is valuable as we will be opening and closing the unit constantly, but is that the case? I am way over my head. Any advice? Thank you.
